Ricotta cream with rhubarb, thyme and honey

Ingredients for 2 servings:

  • 2 stalk(s) rhubarb
  • 125 g ricotta
  • 100 g yogurt substitute, e.g. soy yogurt
  • n. B. Honey
  • Thyme, shredded

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

not too sweet

Trim the rhubarb and cut it into small pieces. Place it in a saucepan, add a little water and honey to taste. Cover the pan and simmer the rhubarb until soft, about 10 minutes. Then let it cool. Mix the ricotta and yogurt into a cream and season with honey and thyme. Divide the rhubarb between two glasses and pour the cream on top.
