Strawberry curd with amaretti

Ingredients for 4 servings:

  • 500 g strawberries
  • 500 g quark
  • 200 g sweet cream
  • 2 tbsp sugar or candarel
  • 200 g amaretti biscuits

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Italian dessert

Puree 300g of the strawberries. If the strawberries aren’t sweet enough, add 1 tablespoon of sugar or Candarel if needed. Reserve 4 good-looking strawberries for decoration, finely dice the rest, and add them to the pureed mixture. Beat the quark with the sugar or Candarel until fluffy. Whip the cream until stiff peaks form, adding pure vanilla or seasoning if desired, and carefully fold it into the quark. Reserve a few amaretti for decoration, coarsely grind the rest in a blender or crush them in a plastic bag with a rolling pin. Set up 4 large, bulbous glasses. In each glass, add a layer of amaretti crumbs, then quark, then strawberry puree, then amaretti crumbs, then more quark and strawberries. The last layer should be amaretti crumbs, garnish with whole amaretti crumbs and the strawberries. This can be prepared well in advance. It can be refrigerated in the morning, but please don’t leave it overnight!
