Onion salad with mayo

Ingredients for 8 servings:

  • 500 g vegetable onions
  • 200 ml vinegar (clear fruit vinegar)
  • 200 g sugar
  • 350 g mayonnaise
  • salt and pepper

Cut the onions into slices or rings approximately 0.5 cm thick, depending on the desired size. Place the onions in a bowl. Mix the sugar and vinegar and pour over the onions. Cover and let it sit in the refrigerator overnight, or at least 12 hours. The next day, drain the liquid and stir in the mayo, seasoning with salt and pepper. The quantities can be varied. The only important thing is the 1:1 ratio of sugar to vinegar. All onions should be covered with the liquid. Stir in the mayo for the desired creaminess.
