Lentil soup with sweet potatoes

Ingredients for 6 servings:

  • 2 onions
  • 2 tbsp olive oil
  • 3 large sweet potatoes
  • 5 large carrots
  • 1 piece(s) ginger, approx. 2 cm
  • 200 g lentils
  • 1 can coconut milk
  • 1 tsp turmeric powder
  • 2 tsp salt
  • 2 tsp pepper
  • 2 sprigs of thyme
  • 1 orange(s), the juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Dice the onions and briefly fry them in hot oil in a pan. Peel and dice the sweet potatoes and carrots, and briefly sauté them with the lentils, then add 1.5 liters of boiling water. Finely grate the ginger and add it to the soup. Add turmeric and pepper. After about 15-20 minutes of cooking time, when the lentils are soft, puree everything. Then add the coconut milk, orange juice, and thyme and season with salt and pepper. Per serving: 356 kcal
