Spicy tomato soup

Ingredients for 4 servings:

  • 1 zucchini
  • 2 tbsp oil
  • 2 onions
  • 2 garlic cloves
  • 800 g tomatoes, peeled
  • ½ liter vegetable broth
  • salt and pepper
  • basil
  • Paprika powder
  • Mint (can also be from a tea bag)

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and dice the zucchini. Heat oil in a soup pot and fry the zucchini cubes, then remove and set aside. Dice the onion and garlic and fry them in the pot. Add the peeled tomatoes and broth and simmer for about 10 minutes. Puree the soup and season with spices. Add the zucchini cubes and cook briefly. Sprinkle with the herbs and serve. Tip: If you have fresh basil leaves, roughly tear them and sprinkle them over the soup.
