Ingredients for 3 servings:
- 300 g carrot(s)
- ½ vanilla pod(s)
- ½ chili pepper(s)
- 1 tbsp butter
- ½ lime(s), the juice
- ½ tsp cane sugar

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Peel the carrots, halve them, and cut them lengthwise into thin strips. Finely chop the vanilla and chili peppers (for less heat, deseed the chili first). Melt the butter in a pan and caramelize the brown sugar (just briefly!). Add the carrots, vanilla, and chili pepper and sauté for about 8-10 minutes. Finally, stir in the lime juice. I also like this vegetable as a snack or eat it with rice.
