Ingredients for 4 servings:
- 800 g asparagus, green
- Salt
- Sugar
- 1 tsp butter
- ¼ ml milk
- 1 egg(s), including the yolk
- 20 g butter, liquid
- 15 g cornstarch
- ¼ ml cream
- 1 tbsp lemon juice
- Nutmeg, grated
- 125g mozzarella
- 1 tbsp chervil, chopped
- 2 tomatoes, finely diced
- 1 tbsp chervil leaves
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Heat salted water with a little sugar and butter, then cook the asparagus for about 10 minutes. Remove and drain. For the sauce, combine the milk, egg yolk, melted butter, and cornstarch and bring to a boil while stirring. Add the cream and season with the spices. Add the mozzarella and chopped chervil. Pour over the asparagus and bake in a preheated oven (200°C) for about 5 minutes. Sprinkle with diced tomatoes and chervil leaves and serve.
