Zucchini and carrot fritters

Ingredients for 2 servings:

  • 1 zucchini, approx. 200 g
  • 300 g carrot(s)
  • 1 tbsp lemon juice
  • 2 tbsp parsley, chopped
  • 2 eggs
  • 2 tbsp oat flakes
  • salt and pepper
  • 1 tbsp oil
  • e.g. fat for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

simple and vegetarian

Wash the zucchini and carrots. Peel the carrots, then coarsely grate them. Mix with the remaining ingredients and season with salt and pepper. Then fry in a pan like potato pancakes.
