Ingredients for 8 servings:

  • 500 g flour
  • 250 ml water, lukewarm
  • 1 cube of yeast, fresh
  • 1 tsp sugar
  • 1 tsp salt
  • 6 tbsp olive oil
  • 30 g sunflower seeds
  • 500 g tomatoes, pureed
  • 2 tbsp tomato paste
  • 1 tbsp pizza seasoning
  • 1 tsp sugar
  • 100 g cheese, grated (Emmental)
  • 500 g spinach, fresh or frozen
  • salt and pepper
  • 2 garlic cloves
  • 2 packs of feta cheese

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Pizza with spinach and feta

Mix crumbled yeast, 1 teaspoon of sugar, and the lukewarm water and let stand for 5 minutes. Meanwhile, roast the sunflower seeds in a pan without adding any fat. Then add them to the yeast-water mixture along with flour, salt, and olive oil and knead everything into a dough. Let it rise for 45 minutes in a warm place (e.g., oven at 30°C). Knead the dough again and then divide it into 2 equal portions. Roll it out onto 2 greased baking sheets. Mix the passata with tomato paste, pizza seasoning, sugar, and 1/2 teaspoon of pepper. Spread half on each base and sprinkle with Emmental cheese. Sauté the spinach and drain well. Season with salt, pepper, and garlic and spread on the pizzas. Cut the feta into pieces and top the pizzas with them. Bake at 200°C fan-assisted oven for about 20 minutes.
