Falafel in tomato sauce with penne

Ingredients for 4 servings:

  • 300g falafel
  • 500 g tomatoes, pureed
  • 2 tomatoes
  • 1 bell pepper(s), green
  • 1 m.-sized onion(s)
  • 2 cloves garlic
  • 1 tsp brown sugar
  • oregano
  • salt and pepper
  • Cayenne pepper
  • Oil for frying
  • 300 g pasta, e.g. B. Penne rigate

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Easy to make and vegetarian

Cook the pasta according to the package instructions. Heat the water until the pasta water boils, then peel the garlic and onion and finely chop or dice them. Peel the tomatoes and dice them, and slice the bell pepper. Heat the oil in a deep pan and sauté the onions and garlic until translucent. Add the bell pepper strips and fry them as well. Then add the diced tomatoes and let the juices reduce slightly. Pour in the passata and simmer briefly. Season with brown sugar, salt, pepper, and cayenne pepper. Sprinkle with oregano. Meanwhile, fry the falafel until crispy, add to the tomato sauce, and let it simmer briefly. Drain the pasta and serve with falafel balls in tomato sauce.
