Marinated carrots

Ingredients for 6 servings:

  • 500 m.-sized carrot(s)
  • 3 garlic cloves
  • 4 tbsp vinegar (wine vinegar)
  • Salt
  • 1 pinch of cayenne pepper
  • 5 tbsp olive oil
  • ½ tsp oregano, fresh (alternatively 1 pinch dried)

Instructions

Working time approx. 20 minutes; Rest period approx. 1 day; Total time approx. 1 day 20 minutes

Scrub the carrots, boil in salted water for 20 minutes. Drain in a colander and quarter. Cut the quarters into 2-3 cm long pieces. Peel and finely chop the garlic. Mix a marinade of wine vinegar, salt, cayenne pepper, olive oil, and oregano. Mix well with the carrots. Let the mixture marinate in a cool place for about 24 hours.
