Tunisian carrot salad

Ingredients for 4 servings:

  • 500 g carrot(s)
  • 100 g olives
  • 4 cloves garlic
  • 4 tbsp olive oil
  • 1 tbsp spice paste (harissa)
  • ½ tbsp caraway (Carvi or Karwia – field caraway)
  • Salt to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Slata Ommok Houriya

Wash and dice the carrots, then cook in salted water until soft. Crush the garlic, caraway seeds, and 1/2 teaspoon of salt in a mortar and pestle. Once the carrots are tender, drain well and then mash with a fork. Add the garlic paste and harissa and mix well. Drizzle with olive oil and garnish with the olives.
