Zucchini flatbreads with herbs and cheese

Ingredients for 2 servings:

  • 2 packs of pizza dough, rolled out round, approx. 260 g each
  • 250 g zucchini
  • 2 garlic cloves
  • 4 tbsp mixed herbs, chopped (rosemary, basil, parsley, etc.)
  • 60 g cheese, mature semi-hard cheese (e.g. Gruyère)
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Coarsely grate the zucchini. Slice the garlic, finely chop the herbs, and coarsely grate the cheese. Place the pizza doughs on baking sheets lined with parchment paper. Mix the zucchini, garlic, herbs, and cheese well, season with salt and pepper, and spread over the dough, leaving a small border around the edges. Bake the flatbreads in the lower half of an oven preheated to 240°C for 10-15 minutes.
