Cherry casserole with oat flakes

Ingredients for 4 servings:

  • 3 egg yolks
  • 75 g margarine, warm
  • 75 g sugar
  • 1 packet of vanilla sugar
  • 1 tbsp brown rum
  • ½ tsp, smothered cinnamon
  • 250 g low-fat curd cheese
  • 250 ml milk
  • 200 g oat flakes
  • 1 jar sour cherries, approx. 350 g drained weight
  • 3 egg whites, beaten to stiff peaks

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Slowly whisk the first 8 ingredients in a large bowl. Fold in the oats and drained sour cherries. Fold in the beaten egg whites. Pour into a large casserole dish and bake at 200°C (preheated) for about 30 minutes. My mother’s old recipe and my children’s favorite dish, preferably with vanilla sauce.
