Zucchini-Carrot Tart

Ingredients for 2 servings:

  • 1 small zucchini
  • 2 large carrots
  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 eggs, depending on size
  • 50 g flour
  • 25 g butter, room temperature
  • salt and pepper
  • e.g. chili powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Grate the zucchini and carrots into small strips using a food processor. Finely dice the onion and finely chop the garlic clove. Add the butter, flour, and eggs to this vegetable mixture and mix everything together. Season with salt, pepper, and chili, if desired. Transfer everything to a lightly greased tart dish and bake at 160°C (320°F) for about 40 minutes. We like to serve this with a delicious quark or a fresh salad, or sometimes just nothing at all.
