Lisa's vegetable soup

Ingredients for 4 servings:

  • 1 ½ liters of water
  • 4 medium-sized potatoes, waxy
  • 2 large carrots
  • 1 savoy cabbage leaf or other cabbage
  • 1 onion or a leek
  • 200 g sugar snap peas
  • some kohlrabi, celeriac or celery
  • 4 tsp, heaped vegetable stock
  • 1 tsp, heaped vegetable paste
  • some chives
  • some parsley
  • Seitan, optional
  • Margarine (Rama)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

First, heat the Rama and sauté the onion (if you don’t have any leek). Slice the carrots and cut the potatoes into large, even-sized cubes (as much as possible). Chop the celery and cabbage in the same way. Finely chop the chives and parsley. Pour the water over the onions, kohlrabi, and cabbage, bring to a boil, and add the vegetable stock and paste. When the water boils, add the potatoes. Reduce the heat slightly so the water simmers gently. Let everything cook for about 15 to 20 minutes. Now add the chives and parsley and reduce the heat to 4. Add the snow peas to level 3. Add seitan if desired, but only heat gently for about 5 minutes. Season the soup if necessary.
