Polenta rösti with vegetables

Ingredients for 2 servings:

  • 150 g polenta
  • 500 ml vegetable stock
  • 1 large carrot(s)
  • 3 m.-sized potatoes
  • 1 onion(s)
  • Vegetable oil, neutral
  • possibly applesauce

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

With potatoes and carrots

Pour the vegetable stock into a saucepan and bring to a boil. Stir in the polenta, stirring with a whisk, and simmer until the polenta forms a thick paste. Set the pan aside to cool. Peel the onion and finely dice. Peel the carrot and potatoes and grate them into a bowl using a vegetable grater. Add the onion and polenta mixture and mix everything well. Heat the oil in a pan and use a tablespoon to scoop out small pieces of the polenta mixture, flatten them slightly, and fry on both sides until golden brown. Arrange the cooked rösti on plates and serve with apple sauce.
