Green asparagus salad with apple

Ingredients for 2 servings:

  • 1 half lettuce(s)
  • 50 g arugula
  • 5 cherry tomatoes
  • 50 g blueberries
  • ½ apple
  • 10 stalk(s) asparagus, green
  • 1 tbsp oil for frying
  • 2 tbsp white wine vinegar
  • 4 tbsp oil
  • 1 tsp honey
  • 1 pinch(s) of salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Tear the washed lettuce into bite-sized pieces and arrange them on two plates with the arugula. Quarter the tomatoes and arrange them on the green salad layer with the blueberries. Cut the apple into thin slices and briefly sauté them with the asparagus in a pan with 1 tablespoon of oil. Arrange the apple pieces and asparagus spears on the plates. Mix the oil, vinegar, honey, salt, and pepper to make a vinaigrette and drizzle over the apple and asparagus salad just before serving.
