Ingredients for 4 servings:
- 50 g butter or margarine
- 20 g sugar
- some lemon peel, untreated, grated
- 1 pinch of salt
- 2 eggs
- 500 g quark
- 150 g flour
- Fat for frying
- Cinnamon – sugar for sprinkling
- possibly compote or applesauce
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Whisk the fat, sugar, lemon zest, salt, and eggs until frothy. Stir in the quark and flour. Heat the fat in a pan, add 1-2 tablespoons of batter to each pancake, and fry until golden brown on both sides. Sprinkle with cinnamon and sugar. Serve with the compote.
