Vegetarian Quesadillas

Ingredients for 4 servings:

  • 8 m.-sized tortilla(s)
  • 2 m.-sized onion(s)
  • 1 handful of chili pepper(s) and/or bell pepper(s), according to taste
  • 2 m.-large tomato(s)
  • 1 box of mushrooms
  • 1 can beans, black
  • 1 small can of corn
  • 300 g Cheddar cheese, as a vegan alternative cheese substitute
  • n. B. Spice mix, Mexican or of your choice
  • e.g. vegetable broth
  • e.g. garlic powder
  • e.g. salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Prepare several bowls or deep plates for the various ingredients. Drain the corn and beans, reserving some of the juice from the beans. Cut the onions into half rings and place them in a container. Cut the chili peppers into thin rings and/or the bell peppers into small cubes, and cut the tomatoes into cubes approximately 1 x 1 cm in size. Place everything together in another container. Clean or peel the mushrooms (do not wash them with water!) and place them in a container as well. Briefly fry the onions until translucent. Add a little salt and set aside. Fry the mushrooms in plenty of oil until they are well saturated and lightly browned. Season with salt, pepper, garlic powder, and Mexican seasoning as desired, then set aside in a container. Briefly roast the chili, bell pepper, and tomato mix over high heat until hot. Season with salt, pepper, and Mexican seasoning and set aside. Reduce the heat and fry the black beans briefly, seasoning them thoroughly with salt, pepper, Mexican seasoning, garlic powder, and plenty of vegetable broth. Set aside. Wipe the pan clean. You’ll need to be quick with the next steps, otherwise the tortilla will overbrown; reduce the heat if necessary! Fry the tortillas on one side over medium heat without oil until bubbles form. Turn them over, sprinkle with cheddar cheese, and top with about 1.5 cm of the reserved ingredients. Fold in the middle with a spatula and flatten. Once the whole thing has taken shape and the cheese has melted, remove from the pan and serve. Note: The quesadillas are vegan when using a cheese substitute.
