Ingredients for 8 servings:
- 60 g flaxseed meal
- 60 ml water, approx.
- 1 onion(s), red
- 250 g mushrooms, fresh
- 1 tbsp, heaped coconut oil
- 2 small cans of black beans (drained weight 240 g each)
- 150 g oat flakes, fine
- 1 tsp thyme, shredded
- 1 tsp cumin
- 1 tsp paprika powder, smoked, mild
- ½ tsp turmeric
- 1 ½ tsp salt
- 50 g walnuts, ground
- Oil for frying
- e.g. mayonnaise, vegan
- e.g. wasabi paste
- 7 burger buns, vegan
- some lettuce leaves
- 3 tomatoes, sliced
- n. B. gherkin(s) or pickled gherkins (jar), sliced
- e.g. BBQ sauce
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
The patties are made with black beans, mushrooms and oat flakes.
Mix the flaxseed with the water and let it swell for a few minutes. Finely chop the onion. Clean and dice the mushrooms. Heat the coconut oil in a pan and sauté the onion until translucent. Add the mushrooms and continue frying for about 3-4 minutes. Place 400g of the drained beans in a large bowl. Add the oats, spices, and salt. Blend with a hand blender until creamy. Add the fried mushrooms, flaxseed, walnuts, and the remaining beans and mix everything well with a wooden spoon. Form the mixture into 8 patties. Heat oil in a large pan and fry the patties for about 4-5 minutes on each side. Mix the mayonnaise with the wasabi paste. Cut the burger bun in half. Spread the bottom half with the wasabi mayonnaise. Place the lettuce on top and top with the barbecue sauce. Place a bean patty on each patty, along with some tomato and cucumber slices. Finally, place the top half of the rolls on top.
