Ingredients for 6 servings:
- 3 tbsp oil
- 2 onions
- 2 garlic cloves
- 500 g pointed peppers
- 650 g vine tomatoes
- 500 g sweet potatoes
- 1.2 liters of water
- 2 tbsp vegetable broth
- 100 g tomato paste
- 2 tbsp sugar
- 500 g tomatoes, pureed
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes
Dice the onions, garlic, pointed peppers, vine tomatoes, and sweet potatoes and sauté in a little oil for 10 minutes. Add the remaining ingredients and simmer for 30-35 minutes. Then strain the contents of the pot. Add toppings as desired, such as feta cheese, bacon-wrapped dates, Cabanossi, small meatballs, fried shrimp, Parmesan cheese, etc.
