Zucchini pan – zucchini in herb pesto sauce

Ingredients for 2 servings:

  • 3 m.-large zucchini
  • 2 onions, red
  • n. B. Oil for frying
  • e.g. paprika powder
  • e.g. curry powder, red
  • n. B. salt and pepper, black
  • 1 jar pesto, green
  • 1 tbsp, heaped herb butter, best homemade

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Wash and dice the zucchini. Peel the onions and dice or slice into half rings, if desired. Sauté them together in a nonstick pan with a little oil over high heat. Season to taste with the spices, then reduce the heat. Stir in the jar of pesto and let it simmer. Finally, add the herb butter. The zucchini should still be firm to the bite. The whole thing needs about 20 minutes in the pan.
