Ingredients for 4 servings:

  • 1 large cheese (Handkäse – Harzer Roller, Quargel)
  • 1 m.-sized apple, sour
  • 10 walnuts
  • 1 small onion(s), red
  • some salt
  • 1 cup of yogurt
  • 1 cup sour cream
  • possibly chives
  • possibly pepper

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 5 minutes

Hessian hand cheese with sour cream sauce, apple and walnuts

Chop the onion and walnuts into small cubes, and cut the Handkäse (cheese) and the washed apple (remove the core) into small pieces, including the skin. Mix these ingredients with the yogurt and sour cream, season with salt, and let it sit for a while. Remove from the refrigerator a while before serving. The Handkäse salad tastes great with bread or on its own as a low-carb snack. The yogurt and sour cream can also be easily replaced with sour cream or vegan products. The ingredient quantities are approximate, as I make the Handkäse salad on a whim; you can also add a little pepper and fresh chives.
