Ingredients for 24 servings:
- 150 g oat flakes or spelt flakes
- 50 g oat flakes, fine
- 50 g wheat flour or spelt flour (wholemeal)
- 75 g ground almonds
- 75 g desiccated coconut (optional)
- 75 g sesame seeds
- 50 g sunflower seeds
- 75 g raisins
- ½ tsp vanilla powder
- 1 pinch of salt
- 150 g honey, liquid and neutral (maybe more)
- 65 ml water
- 65 ml oil, neutral (e.g. sunflower oil)

Mix the dry ingredients in a bowl. Add the honey, water, and oil and knead everything thoroughly. Line a baking sheet with parchment paper. Spread the mixture onto the sheet using a wet spoon (dip it in water repeatedly) and smooth it out. Bake at 160°C (top/bottom heat) for 30 to 40 minutes. Turn off the oven and let the dough dry for about another 10 minutes. Then cut into bars with a sharp knife and let cool. Only then will they set. The bars are best stored in an airtight container. I’ve never been able to test how long they keep. They were gone after a week at the most. And if you prefer something more fruity, add finely chopped dried figs/apricots/plums instead of the raisins.
