Ingredients for 1 servings:
- 15 ml oil
- 3 eggs
- 50 g sugar
- 50 g stevia or xylitol or pureed dates
- 200 g whole wheat flour
- 100 g oat flakes
- 40 g nuts
- 50 g coconut flakes or chia seeds, sunflower seeds, coarse nuts, cocoa or carob powder
- 1 ½ tsp cream of tartar baking powder
- 3 drops of bitter almond oil
- 150 ml oat milk (oat drink) or rice cream
- 3 apples, diced
- 1 tsp cinnamon
- 50 g raisins, possibly cranberries
- 50 g coconut flakes
- 50 g flour
- 75 ml oat milk (oat drink) or rice cream
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 10 minutes
Wholesome and variable
First, whisk the oil, eggs, and sugar until fluffy. Then add the remaining solid ingredients, mix, and stir in the oat milk or rice cream (if using more nuts and coconut flakes, use more oat milk). Pour the mixture into a small baking dish, then sprinkle with raisins (or cranberries if desired), cinnamon, and apples. Then make the crumble by mixing all the ingredients together. Spread the crumble with a teaspoon (it will be a bit runnier than usual, but will be delicious and crispy after baking—the possibilities are endless). Bake in a preheated oven at 170°C for about 45 minutes. Tips: For a large baking sheet, double the amount of ingredients. 50g of the whole wheat flour can be substituted with buckwheat, rice, or coconut flour.
