Red lentil patties

Ingredients for 2 servings:

  • 150 g lentils, red
  • 300 ml vegetable stock
  • ½ onion(s)
  • 15 g flaxseed meal
  • 35 g oat flakes, fine
  • ½ tsp cumin
  • ½ tsp smoked paprika powder
  • some pepper
  • n. B. Oil
  • possibly lemon juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Rinse the red lentils in a sieve and bring to a boil in a pot with the vegetable stock, then simmer over low heat until the liquid is completely absorbed. Then remove from the heat. Meanwhile, finely dice the onion and sauté it in a little oil in a pan. Then add the onions, flaxseed, oats, and spices to the lentils and mix everything well. Depending on the consistency, add a little more water or oats until it becomes a moist, workable mixture. Heat the oil in a pan, shape the lentil mixture into long patties or dumplings with your hands or with two spoons, and fry until crispy on the outside. For a fresh kick, drizzle with a squeeze of lemon juice after serving.
