from lentils
Soak the lentils so they’re easier to use later. Place the lentils of your choice (e.g., red lentils) in a fine sieve and wash thoroughly. Then place them in a container with the dark beer and let them soak, ideally overnight. If you want a more savory flavor, you can use smoked beer instead of regular dark beer. After the soaking time is up, drain the lentils and collect the beer. Then place the lentils in a powerful blender or food processor along with the roughly chopped onion, garlic, parsley, mustard, Worcestershire sauce, and spices and puree everything until smooth. Season to taste and adjust seasoning if necessary. Meanwhile, finely slice the remaining 2 onions and brown them in a little oil or margarine in a pot or pan over low to medium heat. As soon as the onions caramelize, add the remaining beer and reduce until almost no liquid remains. Season with salt, pepper, and sugar, if desired. Heat neutral oil or margarine in a pan over medium heat. Form the mixture into round burger patties and fry them until crispy on both sides. Cut open the burger buns and toast them briefly. Then assemble the burgers to taste with beer onions, tomato slices, cucumber slices, lettuce, cheese substitute, and ketchup. Serve with fries or a salad.
