Ingredients for 1 servings:

  • 500 g flour, type 550
  • 20 g baking malt
  • 10 g butter
  • 15 g salt
  • 20 g yeast
  • 280 ml water

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 15 minutes

I bought baking malt to bake my own rolls. The recipe on the bag of baking malt is pretty good; over time, I’ve found the right mix for me and have tweaked the actual recipe slightly. I think the most important thing is the time it takes. I proceed as follows: Mix the ingredients, let the dough rise for at least an hour, then knead it again, shape the dough into balls, and let them rise in the oven for 20 minutes at around 80 degrees Celsius. Ensure there is sufficient humidity throughout the entire rising and baking time. I use a standard flower spray bottle for this. Once the dough balls have risen nicely, bake at 240 degrees Celsius for around 15 minutes. Let them cool and enjoy!
