Gnocchi salad with arugula and ham

Ingredients for 6 servings:

  • 400 g gnocchi from the refrigerated section
  • 2 small onions
  • 15 cherry tomatoes
  • 200 g ham (cooked ham)
  • 10 green olives, pitted
  • 125 g arugula
  • 3 tbsp white wine vinegar
  • 7 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

Prepare the gnocchi according to the package instructions. Peel the onion, halve it, and cut it into thin strips. Halve the tomatoes and roughly chop the olives. Cut the cooked ham into bite-sized pieces. Wash the arugula. Mix the vinegar, 5 tablespoons of oil, pepper, and salt to make a dressing. Pour the remaining oil into a pan and fry the ham. Then add the onion and sauté. Then add the gnocchi and fry briefly. Add the tomatoes and cook for a few minutes. Empty the contents of the pan into a bowl, add the arugula and olives, and pour the dressing over the top. Cool in the bowl and let stand for about 1 hour.
