Ingredients for 1 servings:
- 3 tbsp golden millet
- 150 ml vegetable stock or water
- 3 tbsp vegetables, in pieces (carrots, peppers, zucchini, leeks)
- salt and pepper
- Paprika powder, hot
- Dill, dried
- turmeric
- ½ tsp lemon juice
- 1 tbsp butter
- 1 tsp chives, dried
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes
Delicious, light, and equally filling. Delicious hot or cold, and quick and easy to prepare.
Heat the water or vegetable broth, add the millet and the vegetables, and simmer gently over low heat for 10 minutes. Add the spices and lemon juice and simmer for another 5 minutes, until the broth is absorbed. Add more hot water if necessary. Mix with the butter and pour into a heatproof container. Sprinkle with chives or other herbs, if available. A delicious office or workshop meal. Especially when it’s still slightly warm at lunchtime.
