Apple and arugula salad

Ingredients for 4 servings:

  • 6 tbsp lemon juice
  • 2 tsp honey
  • 1 tsp mustard
  • salt and pepper
  • 3 tbsp oil (walnut oil)
  • 3 tbsp rapeseed oil
  • 2 spring onions
  • 500 g apples
  • 350 g mushrooms, light
  • 1 bunch arugula
  • 50 g walnuts

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

fast and healthy

Mix lemon juice, honey, mustard, salt, pepper, and both oils to make a salad dressing. Slice the spring onions, peel and thinly slice the apples, slice the mushrooms, roughly chop the arugula, and briefly toast the walnuts. Mix the ingredients and drizzle with the salad dressing. It tastes great with crispy, breaded chicken fillet.
