Potato patties with liver sausage

Ingredients for 4 servings:

  • 750 g potatoes
  • Water (salt water)
  • 100 g bacon, streaky, finely chopped
  • 2 medium-sized onions, finely chopped
  • 200 g liver sausage (country or Palatinate liver sausage)
  • 2 eggs
  • ½ tsp marjoram, dried
  • 3 tbsp breadcrumbs
  • butter
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the potatoes and cook in salted water, then let cool slightly. Fry the bacon and onions in butter until light golden brown, then let cool slightly. Press or mash the potatoes and mix with the bacon and onion mixture. Stir in the liverwurst and eggs and season with salt, pepper, and marjoram. Form into patties, coat in breadcrumbs, and fry in butter until golden brown. Delicious hot or cold.
