Ingredients for 4 servings:

  • 750 g potatoes, cooked
  • 125 g ham, diced, smoked or cooked
  • 4 eggs
  • 4 tbsp milk
  • 125 g bacon, streaky
  • 2 tomatoes
  • chives
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Slice the cold potatoes. Fry the small bacon cubes in a pan, add the potatoes, season with salt and pepper, and cook until light brown. Whisk the eggs and milk together, then add the ham cubes. Peel and dice the tomatoes, chop the chives, mix them with the egg mixture, and pour over the potatoes. Let them set. Divide into four pieces with a spatula, turn over, and cook on both sides. Instead of ham cubes, you can also use smoked pork, meatloaf, or pork sausage cubes. We serve them with beetroot salad and pickled cucumbers.
