Quark – yeast – rolls

Ingredients for 8 servings:

  • 250 g flour
  • 250 g quark (low-fat quark)
  • 1 egg(s)
  • 1 cube of yeast
  • 2 tsp sugar
  • 1 pinch of salt
  • 1 tsp butter, warm
  • 1 egg yolk, whisked (alternatively condensed milk)
  • some water, lukewarm

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

First, dissolve the yeast in a little lukewarm water and 1 teaspoon of sugar. Sift the flour into a bowl. Add the quark, egg, the remaining sugar, butter, and salt. Add the dissolved yeast and stir until a smooth dough forms. Let it rise in a warm place for about 60 minutes. Meanwhile, preheat the oven to 180°C. Shape the dough into about 8 equal-sized rolls. Brush with beaten egg yolk or condensed milk and bake for about 20 minutes. The rolls taste best fresh for breakfast.
