Creamy pistachio ice cream with amaretto and marzipan

Ingredients for 6 servings:

  • 75 g pistachios, ground
  • 750 ml cream
  • 100 g marzipan
  • 12 drops of flavoring (pistachio flavor)
  • 4 egg yolks
  • 150 g sugar
  • 3 tbsp Amaretto
  • 25 g pistachios, chopped

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Heat the ground pistachios with half the sugar, the cream, marzipan, and flavoring; do not boil. Whisk the egg yolks with the remaining sugar. Add the hot cream mixture in a thin stream while continuing to mix. Heat the mixture to 75 degrees Celsius, then let it cool to refrigerator temperature. Add the Amaretto. Pour into the ice cream maker and freeze. Add the chopped pistachios 10 minutes before the end.
