Oven-baked duck breast

Ingredients for 2 servings:

  • 1 large duck breast (min. 350 grams)
  • salt and pepper
  • olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat oven to approximately 100°C. Skin the duck breast (I use an artist’s scalpel), season, and sear it in a pan with olive oil for about 2 minutes on each side. Meanwhile, spread out a sufficiently large piece of aluminum foil, folded in half. Wrap the duck breast in the foil and place it in the oven for 20 minutes. The skin can be rendered in a pan over low heat and the fat used for something else. If you like skin, you can fry it until crispy and eat it.
