Roast turkey with pumpkin

Ingredients for 4 servings:

  • 1 turkey breast
  • 2 slices pumpkin flesh (butter pumpkin)
  • turmeric
  • 1 star anise
  • 2 cloves
  • 1 tsp pepper
  • some coriander seeds
  • some sugar
  • Salt
  • 1 cup of cream
  • ½ cup yogurt
  • 1 lemon(s)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Place the turkey breast and pumpkin wedges whole, skin on, in a casserole dish. Sprinkle with curry powder, cayenne pepper, turmeric, star anise, cloves, ground pepper, ground coriander seeds, sugar, and salt, and drizzle with oil. Toss the meat and pumpkin in the mixture. Mix the cream and yogurt and pour over the meat and pumpkin. Add the zest and juice of 1 lemon. Roast in the oven at 220°C for about 30 minutes. Remove the pumpkin from the dish. Remove the skin from the pumpkin. Slice the meat and pumpkin and arrange on plates.
