Oatmeal, date and coconut confectionery

Ingredients for 1 servings:

  • 200 g oat flakes
  • 100 g pitted dates
  • 50 ml water
  • 40 g coconut flakes
  • n. B. Cinnamon powder
  • n. B. Honey

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Place the oat flakes in a bowl and finely chop with a hand blender. In a separate bowl, finely puree the dates or place them in a blender. If your blender has trouble processing the dates, soak them in warm water for 2-3 hours beforehand. You can then reuse the water for further processing; this will make the confectionery taste even more intense. Mix all the ingredients thoroughly with your hands in a bowl until you have a sticky dough. Form this dough into a log. If the consistency isn’t suitable for shaping, spread out a piece of cling film and place the dough on it. With a piece of cling film of the same size placed on top of the dough, shape the dough. Place the log in the cling film and place it in the refrigerator for 3 hours. Cut the log into slices and roll them in coconut flakes. The confectionery will be a bit soft, but it will keep well in the refrigerator for 3 days. A little secret ingredient: if you like a fresh taste, instead of honey and cinnamon, simply use a bit of grated lemon peel and about 2 tablespoons of quark.
