Frittata with green asparagus and potatoes

Ingredients for 4 servings:

  • 1 onion(s)
  • 400 g potatoes, new
  • 750 g asparagus, green
  • 3 tbsp oil
  • 1 tsp sugar
  • 6 eggs
  • ½ bunch basil, chopped
  • 100 g blue cheese, 50%
  • Salt
  • Pepper, from the mill

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Boil, peel, and slice the potatoes. Peel the lower third of the asparagus, trim the ends, and cut into pieces. Sauté the chopped onion and asparagus in 1 tablespoon of oil for about 5 minutes until al dente. Season with sugar and remove from the pan. Beat the eggs. Mix in the crumbled cheese and chopped basil, and season with salt and pepper. Fry the potato slices in the remaining oil. Add the eggs and asparagus. Let set at low heat for 10-15 minutes. Turn over using two plates and cook for another 5 minutes on the second side.
