Crispy gnocchi with scrambled eggs and roasted onions

Ingredients for 1 servings:

  • 200 g gnocchi, from the refrigerated section
  • 1 onion(s)
  • 2 eggs
  • 1 slice(s) cheese (approx. 35 g), of your choice
  • 1 tbsp milk
  • Salt and pepper, white
  • Paprika powder, hot
  • 1 tbsp chives
  • Butter or margarine for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel and slice the onion. Heat butter or margarine in a pan and fry the onion rings until golden brown. Meanwhile, break the eggs into a bowl and mix with the milk, salt, pepper, and a pinch of paprika. Cut the cheese slice into cubes approximately 0.5 x 0.5 cm, add to the egg mixture, and stir in. Remove the onion rings from the pan. Season with salt and pepper. Add a little butter and the gnocchi to the pan, cover, and fry for 4 minutes, stirring occasionally. Heat a second pan with a little butter, add the egg mixture, and stir until the egg is set. Remove the lid from the gnocchi and fry the gnocchi for about 3 minutes more, until golden yellow and crispy on the outside, stirring occasionally. Add the onion rings and scrambled eggs to the gnocchi in the pan and mix everything together. Serve sprinkled with chives. If you like, you can also serve it with a salad.
