Ingredients for 4 servings:
- 500 g potatoes, blue, from the previous day, cooked, sliced
- 1 onion(s), finely chopped
- 1 tbsp parsley, finely chopped
- 125 ml meat broth, as needed
- 2 tbsp oil
- Chives, in rolls
- salt and pepper

Add onions, pepper, salt, parsley, and vinegar to the potato slices and mix. Then add enough broth to create a moist, but not wet, salad. Let it sit for 10 minutes, then mix in the oil as the last ingredient. Serve with chives. The order of the ingredients is important; it influences the flavor of the salad. It goes well with all dishes that Bavarian potato salad can be served with.
