Fallow Deer Back with Wholemeal Spelled Bread Dumplings
The perfect fallow deer back with wholemeal spelled bread dumplings recipe with a picture and simple step-by-step instructions.
Wholemeal spelled bread dumplings:
- 500 g Spelled bread bread
- 2 Pc. Eggs
- 300 ml Milk
- 0,5 Pc. Onion
- 4 tbsp Parsley
- Salt
- Pepper
- Nutmeg
Fallow deer back:
- 1 kg Raised fallow deer back
- 4 Pc. Shallots
- 800 ml Red wine
- 6 tsp Mirabellenmus
- 10 Pc. Juniper berries
- 1 Pc. Organic lime
- 80 g Butter
- Vegetable oil
- Salt
- Pepper
Red cabbage:
- 1 kg Red cabbage
- 250 g Lard
- 1 Pc. Onion
- 250 ml Red wine
- 3 Pc. Apples
- 1 tsp Caraway seed
- 1 tbsp Mirabellenmus
- Salt
- Pepper
King oyster mushrooms:
- 200 g King oyster mushrooms
- 50 g Butter
- Salt
- Pepper
Wholemeal spelled bread dumplings
- Mix the spelled bread bread with the warmed milk. Season with salt, pepper and a pinch of nutmeg. Whisk the eggs and mix with the mixture. Finely chop the onion and sauté in butter with the chopped parsley. Mix everything and let it steep in the refrigerator for at least 30 minutes.
