Ingredients for 4 servings:

  • 400 g peas (frozen)
  • 600 ml chicken stock
  • 200 ml whipped cream
  • 250 ml milk, fresh, low-fat (1.5%)
  • 1 spring onion(s)
  • Salt and pepper, white
  • nutmeg
  • e.g. olive oil

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

A different kind of soup

Wash and finely chop the spring onions, and sauté them in oil. Add the peas, stock, and cream and simmer for 10 minutes. Combine everything in a saucepan and pass through a sieve. Season with salt and pepper. Simmer the milk for 5 minutes, seasoning with nutmeg, then froth it. Ladle the soup into glasses and top with the milk foam.
