Ingredients for 4 servings:
- 300 g flour
- 100 ml mineral water
- 4 tbsp oil
- Salt
- pepper
- 250 g diced ham
- 2 stalk(s) leeks
- 200 g crème fraîche
- 50 ml cream

Working time approx. 25 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 1 hour 7 minutes

Make a dough with flour, water, salt, and oil, shape it into a ball, and refrigerate it for 30 minutes. Dice the leek. Mix the crème fraîche and cream, and season with salt and pepper. Roll out the dough very thinly on a baking sheet and spread everything on it. Preheat the oven to 220°C and bake the tarte flambée at 200°C for 12 minutes.
