Mediterranean tarte flambée

Ingredients for 3 servings:

  • 200 g wheat flour
  • 200 g wheat flour (wholemeal) or rye flour
  • 1 tbsp oil (sunflower or rapeseed oil)
  • 2 tbsp olive oil
  • 200 ml water
  • 2 pinches of salt
  • 1 pinch(s) of sugar
  • 1 cup sour cream, or crème fraîche
  • 1 cup sour cream
  • 125 g ham, diced
  • 1 stalk(s) leek, and/or 1-2 onions
  • salt and pepper
  • Paprika powder
  • Herbs, optionally wild garlic, parsley and/or chives; fresh, dried or e.g. as seasoning salt

Working time approx. 25 minutes; Total time approx. 25 minutes

Mix the ingredients for the dough and knead well. Roll it out thinly. Mix the sour cream and sour cream. Season with the spices and herbs and spread it over the dough. Then spread the ham cubes on the dough. Place in the oven on the middle rack at 250°C (top/bottom heat) or 210°C (fan oven) for 20 minutes. Meanwhile, slice the leek and/or onions into half rings. After about 20 minutes of baking, add the leek/onions to the tarte flambée. Bake for another 10-15 minutes. Tip: Place baking paper on the work surface and roll out the dough on it. This is much easier, and you can place the dough, including the baking paper, on the baking tray.
