Sauerkraut Soup

  • 1 Shallot
  • 1 Pair Mushrooms, brown
  • 1 tbsp Safflower oil for frying
  • 200 g Hip steak
  • 300 g Sauerkraut, loose (fresh)
  • Season salt, gourmet pepper
  • 250 ml Filtered water
  • 1 tbsp *Gemüsewürze – Pulver/Paste
  • 3 Pickles

  1. Peel and chop shallot, clean mushrooms and cut into slices. Put safflower oil in a medium saucepan, heat and add both, fry. Cut the steak into bite-sized pieces. Pull apart the fresh, loose sauerkraut. Add the meat & sauerkraut.
  2. Roast both, season and deglaze with water. Add the vegetable seasoning, stir in and bring to the boil. Then shift down and let simmer briefly. Then pull the pot off the stove. Dice small gherkins and add. Then mix everything together.
  3. Transfer to deep plates and serve immediately.
