Wine – Sauerkraut Soup

Ingredients
 

  • 200 g Sauerkraut
  • 100 g Bacon cubes
  • 1 Onion, a small one
  • 1 Clove of garlic
  • Clarified butter
  • 600 ml Meatsoup
  • 1 tsp Caraway seeds
  • 1 tsp Paprika powder
  • Salt
  • 50 ml Cream
  • 50 ml White wine, to your taste
  • 200 ml Sour cream
  • 1 Bratwurst coarse
  • 1 Chives

Instructions
 

  • Drain the sauerkraut well, squeeze it out again if necessary and then cut it into small pieces. Sprinkle with caraway seeds.
  • Peel the onion and garlic. Finely dice the onion. Then heat some clarified butter and sweat the onion. Deglaze with hot meat stock and add the sauerkraut. Press the garlic through the press. Season with paprika and possibly with a pinch of salt. Stir in the cream and simmer on a low heat for a good 20 minutes.
  • Heat a little clarified butter and fry the bacon cubes. Add to the soup.
  • Cut the sausage into slices and fry well on both sides in a little clarified butter. Then take it out and keep it warm. Dissolve the roasted aromas with a little water and add to the soup.
  • Now take the soup pot off the stove and fold in the sour cream and white wine and season again if necessary.
  • Put the hot soup in a soup cup and garnish with the roasted sausage slices and some chives ..... enjoy your meal .....
