Cut the Gouda into long sticks (do not dice them!). You should make about 8-10 sticks. For the breading, pour the flour and breadcrumbs into separate deep plates, whisk the egg (also in a deep plate), and add a little salt and pepper. Mix the basil with the breadcrumbs. Now coat each cheese stick in flour, then in the egg, and finally in the breadcrumbs. Add more flour and breadcrumbs as needed; the egg should be enough. It’s important that the entire stick is covered in the breading, otherwise the cheese will melt into the pan. Heat a lot of oil in a pan and fry the sticks until they are floating. This must be done quickly, otherwise the cheese will become too soft. When they are done, place them on a piece of kitchen paper, as they are still very fatty. Once the fat has drained off a little, they can be served warm or cold. They’re still a bit soft when warm, but I personally prefer them that way. The sticks taste great with a warm tomato dip.
