Purple potato chips with cheese

Ingredients for 4 servings:

  • 500 g purple potatoes
  • 1 liter peanut oil
  • 1 pinch of sea salt
  • 100 g cheese, e.g. Mimolette or another yellow cheese

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 11 minutes; Total time approx. 26 minutes

A delicious eye-catcher

Wash the potatoes and pat dry. Then cut into thin slices. Heat the peanut oil in a deep fryer or deep fryer to 175°C and preheat the oven to 180°C (top/bottom heat). Fry the potato slices in the hot peanut oil for about 8 minutes. Remove from the oven and drain on a paper towel. Line a baking sheet with parchment paper. Spread the potato chips on top and season with salt. Coarsely grate the Mimolette cheese and spread it evenly over the chips. Bake the potato chips on the middle rack for about 3 minutes, until the cheese begins to melt. The chips can be served hot or cold.
